A new kitchen recipe from Delish shows how to make burritos with tofu as the main filling. According to Delish, tofu is the star of the burritos in this recipe, and it is combined with smoky, saucy tofu crumbles, cilantro-lime rice, and pinto beans.

The tofu is cooked with chipotle chiles in adobo sauce (a spicy, smoky sauce), tomato paste, chili seasoning, cumin, vegetable stock, and lime juice. Before it is mixed in, the tofu is seared on one side. This gives it a bite that mimics ground meat.

The rice is cooked in water with jasmine rice and kosher salt for 15 to 20 minutes. It is then flavored to become cilantro-lime rice.

The pinto beans are seasoned with Mexican oregano, a type of oregano often used in Mexican cooking. If Mexican oregano is not available, marjoram or Italian oregano can be used instead. Pre-seasoned canned whole or refried beans can also be used in place of the seasoned pinto beans.

Before filling, the tortillas should be steamed until they are stretchy and pliable, which means easy to bend without breaking. The burritos are then filled and topped with shredded lettuce, sour cream, salsa, and cheese.

When rolling the burritos, the recipe recommends wearing gloves or being willing to get your hands dirty. If you want to make extra, pinto beans can be scaled up and frozen for up to 6 months.
